Burger Cravings? Spicy Black Bean Patties

I have tried, in my years traveling on the road to Wellville, to go vegetarian a time or two. I never manage to hold out for long – six months here, a year there – because I seriously love burgers. I think I could do without steak of all kinds indefinitely, but take away burgers for life?! Unthinkable!

Still, I’ve spent those vegetarian years exploring other healthy alternatives, and this is one of my favorites by far.

Blackbean Burger

Spicy Black Bean Patties


2 cans organic black beans, drained & rinsed

1/2 of a 4 ounce can fire-roasted green chiles

1/2 cup finely chopped red onion

3 tbsp olive oil

1/2 tbsp kosher salt

1/4 tsp ground chipotle chili powder

1/4 tsp roasted chili powder

Chipotle Aioli:

1/2 cup light mayonnaise

1 tsp chipotle hot sauce

1/4 tsp ground chipotle chili powder

In a non-stick skillet, heat 1 tbsp olive oil over medium heat. Add onion and green chiles and saute until onions are translucent. Add chipotle powder and chili powder and saute another minute, remove from heat. In a food processor, combine using pulse setting your black beans, kosher salt and sauteed mixture until just combined. Heat remaining oil in the same skillet used for the onions over medium heat. Using your hands, form the bean mixture into patties, sprinkle with a little more kosher salt, then set gently in the oil. (Don’t mess around with them a whole lot here – they’re prone to falling apart.) Cook for about 3 or 4 minutes (just going for a light crust on the outside), then carefully turn and repeat. Meanwhile, prepare your Chipotle Aioli by combining all three ingredients in a small bowl, stirring til thoroughly combined.

Serve your patties over brown rice or on toasted whole grain bun. Garnish with avocado, tomato, salsa, red onion (in whatever combination your taste buds call for), squeeze a little lime juice over the whole enchil–er, patty, and finish with the aioli. Yum!

    What a great recipe! Thank you for sharing – we’ll be trying this!! Another recipe I saw recently suggested mashing black beans and then adding some finely diced veggies like bell pepper and/or corn niblets, and then rolling them into balls and baking them, for a sort of alternative falafel-type croquette… and then you serve them with corn tortillas and fresh salsa (and avocado, if desired!).

      I really like the texture on these – you have to approach them knowing it’s not a burger, and if you’re not worried about going gluten-free, you can add a half cup of bread crumbs, which will help with holding them together better.
